If you have a hankering for the Mediterranean flavors but don’t have a trip to Greece in your near future, try this yummy salad!
SANTORINI SALAD
adapted from Come to the Table
You Will Need:
1/4 cup red wine vinegar
2 teaspoons lemon juice
2 garlic cloves, pressed (or minced)
1 heaping teaspoon dried oregano
1 teaspoon sea salt
pepper to tatse
1/2 cup extra-virgin olive oil
pint of grape tomatoes, sliced in half
1 hothouse cucumber, seeded and sliced
1/2 red onion, thinly sliced
5 ounces good feta, cut into chunks
For the dressing-
Combine vinegar, lemon juice, garlic, oregano, salt, pepper and oil in a mason jar.
Shake until the ingredients have come together.
Set dressing aside in the fridge.
For the salad-
Combine tomatoes, cucumber, onion and feta.
Toss with dressing.
Refrigerate for several hours to let the flavors meld.
